Full instructions are included with each pair of composters, but for those yet to buy here is how to use your Kitchen Waste Composter:

Add your kitchen scraps and food waste to the composter, having chopped up any really big lumps (such as broccoli stems etc). You can put just about any food waste in your composter; this includes raw or cooked meat*, egg, cheese, all vegetable waste, fish, dessert and sugary food waste, cooked rice, even small quantities of kitchen paper!

Once you have added your waste to the composter sprinkle a handful of Bokashi over the top, covering your food waste evenly. To work effectively the Bokashi must be evenly spread within your food waste, so each layer of food waste and bokashi should be as thin as possible.

When the Bokashi has been spread, replace the lid. Repeat this process as you generate food waste until the composter is full to the brim. Put a good sprinkle of bokashi on the top and replace the lid. This full composter can then be put aside for two weeks to fully treat your food waste. While this is happening you can fill your other composter with the same process. Periodically drain both composters, the frequency depends on what you've put in the composter. The draied liquid can be used to fertilise you house plants in small quantities, or it can safely be poured down the drain. It will help prevent you drains from smelling.

After two weeks your full composter will be ready to empty. You can either empty it onto your existing compost heap, or dig a hole and bury your treated food waste. Your waste must be left for at least another two weeks, in ideal conditions, before use on your plants. In normal conditions allow a month, and in the winter, allow as long as possible.

Your food waste will have been treated by a process called fermentation composting. It will not look very different from how it went in, however the microorganisms in SCD EM will have gone to work on your food waste. Your compost heap will not smell foul, nor will it attract vermin or flies. Food and garden waste treated with SCD EM or Bokashi will compost much quicker than normal, and require less turning.

You may see fine white fur on the surafce of your food waste, this is not bad. In fact it is a useful indicator that your food waste is being composted properly.

* Meat, fat, cheese etc should be chopped into small pieces. Use a good amount of bokashi with this waste.
